Harees — the Ramadan champion ❤️

Harees is the most loved Ramadan food in GCC. It's wheat + meat + patience = pure love. Slow-cooked until creamy, it warms the soul. Master Harees and the family will love you in Ramadan!

  • 🌾Soak whole wheat overnight1 cup wheat in cold water 8+ hours. Soft grain!
  • 🐔Use chicken or lambBone-in pieces best. Meat falls off the bone after slow cook!
  • 💧Cover with water + saltWheat + meat + 6 cups water + salt. Big pot!
  • 🔥Slow cook 3-4 HOURSLow heat, lid on. Stir every 30 min. Patience = perfection!
  • 🥄Mash everythingWhen meat falls apart, MASH together with wooden spoon. Creamy!
  • 🧈Top with ghee + cinnamonHot ghee on top, sprinkle cinnamon. THIS is the GCC way!
  • 🍯Some add sugar on topSweet Harees — Saudi style! Or savory only. Ask madam!

The Slow-Cook SecretHarees is NOT a quick dish. The longer you cook it, the better! Some families cook it overnight on very low heat. Modern shortcut: use a pressure cooker — 1 hour on low pressure = same creamy result! Madam will think you cooked all day. 🌟

2🥘 Marak Stews

Marak — rich GCC stew over rice 🌟

Marak means "broth" in Arabic — but in GCC it's a thick rich stew, served over rice. It's daily home food. Master Marak and you become the queen of comfort cooking!

  • 🧅Brown onions FIRST2 onions chopped. Cook until golden brown. This is the BASE!
  • 🥩Brown the meatLamb, beef, or chicken. Brown all sides. Locks in flavor!
  • 🍅Tomato + tomato paste2 tomatoes + 2 tbsp paste. Cook 5 min until rich color.
  • 🌶️GCC spice blendBaharat, cumin, coriander, turmeric, cinnamon stick. Mmm!
  • 💧Add water + coverJust cover meat. Simmer 1.5 hours until tender.
  • 🥕Add vegetables lastPotatoes, carrots, zucchini in last 30 min. Don't overcook!
  • 🌿Fresh cilantro at endSprinkle fresh cilantro before serving. Beautiful!

The Browning SecretThe DEEPER your onions and meat brown, the RICHER your Marak. Don't rush this step! Take 10-15 minutes for golden onions. Some families add 1 black lime (loomi) — it's MAGIC. Pierce holes in it, drop in pot. The taste is unforgettable! 🌶️✨

Shorabat Adas — every Ramadan iftar 🌙

Shorabat Adas (lentil soup) is the FIRST thing GCC families eat at iftar in Ramadan. Healthy, warm, easy, beloved by all. Learn it well — you'll make it 30 days in Ramadan!

  • 🌱Use red lentils1 cup red lentils. Wash 3 times until water clear.
  • 🧅Onion + garlic + cuminBrown onion in oil. Add garlic + 1 tsp cumin. Fragrant!
  • 🥕Add carrot + potatoOptional but lovely. Adds sweetness and body.
  • 💧Add lentils + 5 cups waterSimmer 25 minutes. Lentils break down — soft and creamy!
  • 🌶️Add turmeric + salt1 tsp turmeric for golden color. Salt to taste.
  • 🥄Blend smoothUse stick blender or regular blender. Velvety texture!
  • 🍋Serve with LEMON wedgeSqueeze lemon on top before drinking. GCC tradition!
