The secret of seafood — CLEAN it right ✨

Bad seafood smells fishy. Good seafood smells like the sea — fresh and salty. The secret is in cleaning! Master these 7 prep secrets and your fish will taste amazing every time.

  • 👃Smell test FIRSTFresh fish smells like sea, NOT strong fish! Bad smell = old fish.
  • 👁️Check fish eyesClear bright eyes = fresh. Cloudy eyes = old. Tell madam!
  • 💧Wash fish 3 timesCold running water. Inside and outside. Remove all blood.
  • 🍋Lemon + salt rubRub fish with lemon + salt. Wait 10 min. Rinse. NO smell!
  • 🦐Devein the shrimpRemove black line on back. Use small knife. Looks ugly — taste better!
  • ❄️Keep COLD until cookingFridge or ice. Never leave seafood at room temp more than 1 hour!
  • 🌶️GCC fish marinadeLemon + garlic + turmeric + cumin + salt. 30 min. Magic flavor!

The Madam's TrickIf madam says "the kitchen smells like fish" — you didn't clean properly! After cooking, rub lemon on hands, cutting board, and pots. The fish smell disappears! Open windows, light a candle. The kitchen will smell fresh. Madam will be HAPPY. 🍋✨

2🍚 Sayadiya Rice

Sayadiya — the fisherman's rice 🌊

Sayadiya means "fisherman's dish" in Arabic. It's the famous Gulf fish & rice — onions caramelized, fish flaky, rice golden. Coastal families LOVE this. Make it well and you'll be a star!

  • 🐟Use Hamour or any white fish1 kg fish, cut in big pieces. Bone-in for flavor!
  • 🧅DEEP FRY onions until brown3 big onions sliced thin. Fry until DARK brown. THIS is the secret!
  • 💧Save the onion oil!After frying onions, KEEP the oil. Use it for rice. Pure flavor!
  • 🌶️Sayadiya spice mixCumin, coriander, turmeric, cinnamon, dried lime. Beautiful!
  • 🐟Fry fish in onion oilCoat fish with spices, fry 2 min each side. Set aside.
  • 🍚Cook rice in fish brothUse the fish-onion oil. 1 cup rice = 1.5 cups water. 20 min.
  • 🌟Serve fish on top of ricePlate rice, fish on top, more fried onions, parsley. Beautiful!

The Onion Color SecretSayadiya's color and flavor come from VERY dark fried onions — almost burnt looking! Don't be afraid. The darker, the sweeter and richer. Some chefs add 1 tsp sugar to deepen the color. This is the difference between average Sayadiya and AMAZING Sayadiya! 🧅✨

Machboos Robian — UAE favorite 🇦🇪

Machboos Robian (Shrimp Machboos) is the most popular seafood dish in UAE and Bahrain. Spicy, fragrant, with tender shrimp. Faster than chicken Machboos because shrimp cooks fast!

  • 🦐Use medium shrimp500g shrimp. Devein, peel (keep tails for beauty).
  • 🥄Marinate 15 min onlyLemon + garlic + turmeric + salt. Don't over-marinate shrimp!
  • 🧅Brown onions + tomatoes2 onions, 2 tomatoes, garlic. Cook 10 min until rich.
  • 🌶️Add Machboos spicesBaharat, dried lime, cinnamon, cardamom. Smell heaven!
  • 💧Add water + cook riceDrained basmati on top. Cover. Cook 18 minutes.
  • 🦐Add shrimp LASTTop of rice in last 7 minutes only. Pink & tender!
  • 🌿Cilantro + fried onionsFresh cilantro and crispy onions on top. Beautiful!

The Shrimp Timing SecretShrimp goes from RAW to PERFECT in 5-7 minutes. Cook longer = RUBBER! That's why we add shrimp LAST. Watch them carefully: when they turn pink and curl into "C" shape, they're done. Take pot off heat. Madam will love the tender shrimp! 🦐✨

4🔥 Grilled Fish

Whole grilled Hamour — restaurant style 🌊

Nothing beats WHOLE grilled fish for special occasions. Crispy skin, juicy meat, smoky flavor. GCC families serve this when guests come. Master it — you become a legend!

  • 🐟Choose whole Hamour or Sherry1.5-2 kg whole fish. Madam buys. Ask fish shop to clean it!
  • 🔪Score the skinCut 3-4 lines on each side. Helps marinade go in!
  • 🥄Make harra pasteCilantro, garlic, lemon, turmeric, chili, olive oil. Blend!
  • 🤲Stuff and rub everywhereInside cavity, on top, in score lines. Use lots!
  • Marinate 30 minutesCover, fridge. Don't over-marinate fish (lemon cooks it!).
  • 🔥Oven 220°C / grill20-25 minutes. Skin should be crispy, flesh white.
  • 🍋Serve with lemon + tahiniWedges of lemon, tahini sauce, Arabic salad on side!

The Skin Crispy SecretFor SUPER crispy skin: 1) Pat fish completely DRY before marinade, 2) Brush extra olive oil on skin before cooking, 3) Last 3 minutes — switch oven to BROIL/MAX. The skin becomes shattering crispy! Madam will say "Where did you learn this?" — answer with smile! 🐟👑
