Hummus — silky smooth perfection 🇱🇧
Restaurant Hummus is SILKY smooth — not chunky! The secret? Cooking chickpeas longer, peeling them, and lots of tahini.
🫘Soak chickpeas overnight1 cup dry chickpeas in water 8+ hours. Or use canned!
🍳Cook with baking soda1/2 tsp baking soda makes them SO soft. Cook 1 hour.
🤲PEEL the chickpeasAfter cooking, rub between hands. Skins float — discard! Smooth Hummus!
🌶️Blend with tahini + garlic1/2 cup tahini, 4 cloves garlic, lemon juice, salt.
❄️Add ICE cubes!2-3 ice cubes while blending = SUPER fluffy white Hummus!

🌾Soak fine bulgur1/2 cup fine bulgur in water 15 min. Drain well!
🍅Diced tomato + cucumberSmall dice. Don't make watery!
🧅Tiny onion + green onionVery fine. Taste don't dominate.
🍋Lemon + olive oil dressingLots of lemon, lots of olive oil, salt!
🥬Serve with lettuce leavesRomaine leaves as scoops. Healthy and beautiful!

Mutabal (also called Baba Ghanoush) is creamy smoky eggplant dip. The secret? CHARRING the eggplant black on flame!
🍆Char eggplant on flameOn gas stove flame! Turn until skin is BLACK and soft inside.
🥄Scoop out fleshSkin off, soft inside scooped. Discard skin completely!
💧Drain water 30 minPut in strainer, water drains. Don't skip — watery Mutabal = bad!
The Smoky SecretIf no gas stove, use OVEN BROILER! Roast eggplant at MAX heat 30 min, turning. The black charred skin gives the SMOKY flavor — that's the heart of Mutabal! Madam will love it! 🍆🔥
